A millilitre is exactly one cubic centimetre, which is why medicine and laboratory work quote both and mean the same thing.

A US customary cup is 236.6 ml, but American nutrition labels use a "legal" cup of exactly 240 ml, and a metric cup in Australia is 250. A recipe scaled up tenfold will show which one it assumed.

What it costs to round the factor

The factor is 0.004227, and almost nobody carries that around. Rounded to 0.0042 it is off by 0.63 % — which stays invisible on small numbers and turns into a whole unit somewhere around 1,000 ml.

That is the number worth knowing before you round: not the error itself, but where it stops being ignorable. Below that point the shorter factor is the sensible one; above it, use the field above, which never rounds until it prints.

Three cups, and a recipe means the smallest

The customary cup a recipe means is 236.58824 ml, and that is the one this page uses. A US nutrition label means the legal cup — 240 ml, 1.4 % more — and an Australian or New Zealand recipe means the metric cup, 250 ml, 5.7 % more again.

No single cup shows the difference, which is exactly why it survives: scale a recipe by ten and the metric cup has added over half a cup of whatever you are measuring. Worth remembering too that a cup is a volume and not a weight — a cup of flour and a cup of sugar are different masses, and that error is far larger than any of these three.

A metric recipe in a kitchen that owns nothing but cups

European, British and Australian recipes give liquids in millilitres and solids in grams, and neither converts comfortably into a nested cup set. 250 ml is 1.057 cups, 150 ml is 0.634, 100 ml is 0.423. There is no cup fraction that lands on any of them, which is why converting a metric recipe line by line produces a page full of numbers nobody can measure.

The workable approach is to convert to the nearest measurable fraction and then check the ones where it matters. A quarter cup is 59 ml, a third is 79, a half is 118, two thirds are 158 and three quarters are 177. Anything within a few millilitres of those can be measured as written; anything that lands between them is a candidate for a scale or a metric jug, both of which are cheaper than repeated failure.

A measuring set bought in the United States or Canada is the customary cup of 236.6 ml. One bought in Australia, New Zealand or Britain is a metric cup of 250. A Japanese set is 200. The packaging rarely says, the sets look identical, and the largest holds a quarter more than the smallest — a gap wide enough to be a different recipe rather than a rounding error.

Weighing settles it in a minute. Fill the cup with cold water, tip it onto a scale, and read the grams: water is within a fraction of a per cent of one gram per millilitre at kitchen temperature, so 237 g means a customary cup and 250 g means a metric one. The rice cooker cup is 180 ml and belongs to neither system

The plastic cup that comes with a rice cooker is a Japanese gō — 180 ml — and it is calibrated against the water lines moulded inside the bowl. That is not a rounding of the 200 ml Japanese cooking cup and it is nothing like the 236.6 ml American one. A cooker filled with American cups of rice and water to the marked line receives about a third more rice than the line was drawn for.

The same appliance logic runs through Japanese recipes generally. A cup in a Japanese cookbook is 200 ml, a tablespoon is 15 ml and a teaspoon 5, which are the metric spoons rather than the American ones. Where a recipe and an appliance disagree, the appliance wins: its markings are physical and the recipe’s cup is a word.

Flour is where the cup loses to the scale

A cup is a volume, flour is compressible, and the two do not get on. Spooned lightly into the cup and levelled, plain flour is about 120 g. Scooped straight from the bag, packed by the scoop itself, the same cup can hold 150. That is a 25% spread from one ingredient measured by one person with one cup, and it is larger than every unit difference discussed anywhere on this page put together.

Which is the whole argument for grams, and the reason a metric recipe gives them. A gram of flour is a gram however it was handled, so a recipe written in grams is reproducible in a way that one written in cups cannot be. Where a recipe offers both, take the grams — converting the cup figure to millilitres and measuring that back out preserves the error rather than removing it.

Liquid cups and dry cups measure the same volume differently

American kitchens keep two kinds of cup measure, and the difference is the tool rather than the unit. A dry cup is filled to the brim and levelled with a straight edge; a liquid cup is a jug with graduations below the rim, read at eye level against the meniscus. Both are 236.6 ml at the mark. Neither measures the other’s ingredients well.

Measuring a liquid in a dry cup means filling to the brim and carrying it without spilling, which people compensate for by under-filling. The awkward band is between 60 and 240 ml, where the metric numbers are round and the cup fractions are not. 100 ml, 125 ml, 150 ml and 200 ml land at 0.42, 0.53, 0.63 and 0.85 of a cup. A 125 ml quantity measured as half a cup is 7 ml short, which is fine in a soup and not fine in a set custard. Those are the lines worth measuring in a metric jug even in a cup kitchen.

One graduated jug removes most of this page

A litre jug graduated in millilitres costs less than a set of cup measures and answers every liquid question a metric recipe asks without any conversion at all. It also removes the compounding problem: a recipe converted line by line into cup fractions accumulates a rounding error at every line, and one converted to nothing accumulates none.

The case for keeping the cups is dry ingredients and American recipes, which is a real case rather than a concession. What the jug cannot do is measure flour honestly, and neither can the cup — so the full kit for cooking across both systems is a jug for liquids, a scale for solids, and the cups for the American recipes that were written around them. Two of those three are the ones that give reproducible results.

Getting from millilitres to cups without arithmetic

Divide by 240 and treat the answer as a slight underestimate — a true cup is 236.6, so dividing by 240 undercounts by one and a half per cent. 500 ml is a shade over two cups, 750 ml a shade over three, a litre a shade over four. Four cups to the litre is the anchor worth remembering, and the exact figure is 4.227.

For the other common cups the same trick works with a different divisor: 250 for a metric cup, 200 for a Japanese one.
