Convert fl oz to ml
A US fluid ounce is 29.57 ml; a UK one is 28.41 ml. They are different units with the same name, and recipes rarely say which they mean.
A millilitre is exactly one cubic centimetre, which is why medicine and laboratory work quote both and mean the same thing.
The factor is 29.57353, and almost nobody carries that around. Rounded to 30 it is off by 1.4 % — which stays invisible on small numbers and turns into a whole unit somewhere around 100 fl oz.
That is the number worth knowing before you round: not the error itself, but where it stops being ignorable. Below that point the shorter factor is the sensible one; above it, use the field above, which never rounds until it prints.
The US fluid ounce is two different sizes wearing one name. This page uses the US one, which is 29.57353 ml; the imperial one still used in the UK and Ireland is 28.41306 ml — smaller by 3.9 %.
That gap is the awkward size: far too big to ignore in a recipe, and far too small to spot from the answer alone. If your figure came from a British source, take the second number, and note that the fluid ounce is the one unit here where the imperial measure is the smaller of the two.
The quantities an American recipe actually uses are a short list, and having them in millilitres removes the arithmetic entirely. 1 fl oz is 29.57 ml, 2 is 59.15, 4 is 118.29, 6 is 177.44, 8 is 236.59, 12 is 354.88 and 16 is 473.18. Those are the numbers behind a quarter cup, a half cup, a cup and a pint.
None of them lands on a jug graduation, which is the practical difficulty. A domestic measuring jug is marked at 50 ml intervals with 25 ml subdivisions if it is generous, so 177.44 ml has to be read as "a little under 180" and that is as good as the instrument gets. The conversion is exact and the pour is not, and knowing which is which decides how much rounding is defensible.
Rounding 29.5735 to 30 is the standard kitchen shortcut and it is off by 1.44 per cent. For a single ingredient poured into a pan that is invisible — 4 fl oz becomes 120 ml instead of 118.3, a difference of less than half a teaspoon.
The error is proportional, so it grows with the recipe rather than cancelling. A batch built from 32 fluid ounces of liquid at 30 ml each is 960 ml against a true 946.4, over by nearly 14 ml; scaled for a crowd it becomes a visible amount of stock. The rule that survives is to round the ingredients and not the multiplier: convert the ounce figure once, then scale.
An imperial fluid ounce is 28.4130625 ml, so a British recipe written in ounces is asking for about four per cent less liquid than the same numbers would mean in America. Ten fluid ounces is 284 ml in London and 296 ml in Chicago, and neither recipe will say which it meant.
The reason the British ounce is the smaller one is worth holding on to, because it contradicts the rule that works everywhere else in the imperial set. An imperial pint is divided into twenty fluid ounces where a US pint is divided into sixteen, so the larger pint yields the smaller ounce. Anyone reasoning from "British measures are bigger" gets this pair backwards.
A US package will often carry both kinds of ounce. "12 fl oz" is a volume and converts to 354.9 ml; "Net Wt 12 oz" is a mass and converts to 340 g. Liquids tend to be sold by volume and solids by weight, but a syrup, a sauce or a cosmetic can be labelled either way and the manufacturer chooses.
The mistake is durable because it very nearly works. Water is one gram per millilitre, so for anything close to water the two answers land within a few per cent of each other and nothing looks wrong. For honey at about 1.4 g/ml, or for a dry ingredient, the same substitution is out by half as much again.
Drinks recipes are written in ounces and fractions of ounces, and the fractions are the awkward part. 1.5 fl oz is 44.36 ml, 0.75 is 22.18, 0.5 is 14.79 and 0.25 is 7.39. A UK spirit measure is 25 or 35 ml by law, so no converted American recipe will ever match a British bar measure.
At that scale the sensible metric equipment is a jigger marked in millilitres or a small measuring spoon rather than a jug. A half ounce at 14.79 ml is close enough to a 15 ml tablespoon to substitute directly, and a quarter ounce at 7.39 ml is near a half tablespoon — which is how most people end up making the conversion in practice, whether or not they do the arithmetic.
Below about 15 ml a jug is the wrong instrument: the meniscus is a large fraction of the quantity and the residue left in the vessel is another. Anything under half a fluid ounce is better handled with a measuring spoon, and anything under a teaspoon with an oral syringe, which is graduated in single millilitres and delivers what it says.
This is where an ounce figure is worth converting at full precision rather than rounded. A tenth of an ounce is 2.96 ml, and at that size the difference between 2.96 and 3 is a per cent and a half of a quantity that was specified to a tenth for a reason. The larger the quantity, the more rounding it tolerates.
The chain is three stipulations long. A US gallon is defined as exactly 231 cubic inches; an inch is exactly 25.4 mm by the international agreement of 1959; a fluid ounce is a gallon divided by 128. Multiplying exact numbers gives an exact number, and 29.5735295625 is where the digits run out rather than where somebody stopped writing.
It follows that any converter carrying the full definition agrees with this one to as many places as either will display. A disagreement in the third or fourth decimal is a rounding decision made on the way to the screen — often a factor rounded before the multiplication rather than after — and not a difference of opinion about how large an ounce is.
An American ingredient list mixes fluid ounces with cups, pints and quarts, and converting each line separately is more work than the structure requires. All four are divisions of the same gallon: 8 fl oz is a cup, 16 is a pint, 32 is a quart. Restating the whole list in fluid ounces first turns a set of unrelated conversions into one multiplication.
It also makes the total visible, which is the number most worth having. A recipe adding up to 40 fluid ounces of liquid is 1,183 ml, and knowing that before starting decides whether the pan is large enough and whether the batch needs halving. Converting line by line answers each ingredient and never produces the figure that governs the equipment.

For a single pour, yes — the error is 1.4 per cent, well inside what a jug can show. It stops being safe when the figure is multiplied: eight ounces at 30 ml gives 240 ml against a true 236.6, and a recipe scaled fourfold from that is 14 ml over.
Smaller, at 28.4130625 ml — 3.9 per cent less than the American one. That is the reverse of the pint, quart and gallon, where the imperial measure is about 20 per cent larger, and it catches people who apply the usual rule.
Eight, by definition — a US cup is a gallon over sixteen and a fluid ounce is a gallon over 128. So 8 fl oz is 236.59 ml, 4 fl oz is 118.29 and 2 fl oz is 59.15. Anywhere an American recipe says a cup, half a cup or a quarter, the ounce figure follows without a separate conversion.
A US bar measure is usually 1.5 fl oz, which is 44.36 ml, and cocktail recipes written in ounces are almost always working in halves and quarters of that. A UK spirit measure is 25 or 35 ml by law, so a converted American recipe never lands on either.
Only if it says "fl oz". A plain "oz" or "Net Wt oz" is a mass and converts to grams — 1 oz is 28.35 g. The two abbreviations sit in the same place on a package and differ by two letters.
One ml is 0.033814 fl oz. It is the same relationship read backwards, so an answer from one page put through the other has to come back to where it started.
