US fluid ounce and US gallon

A US fluid ounce is 29.57 ml; a UK one is 28.41 ml. They are different units with the same name, and recipes rarely say which they mean.

A US gallon is defined as 231 cubic inches, exactly — a definition that comes from an English wine gallon of 1707. The imperial gallon is 4.55 litres, about 20% larger.

It takes 128 US fluid ounces to make a US gallon

Going this way is a division, and by a whole number: 128 of these fit into one US gallon with nothing left over. The awkwardness is only that the answers come out as fractions — a third of a US gallon, a twelfth of one — rather than as the round figures the other direction gives you.

Counting upward from a fluid ounce to a gallon

Going up, the ladder is 8 fluid ounces to a cup, 2 cups to a pint, 2 pints to a quart, 4 quarts to a gallon. None of those is a number anybody wants to carry around, which is the case for converting once and writing it down.

The daily water target is where most people meet this arithmetic. A gallon a day means sixteen 8 oz glasses, four 32 oz bottles, or eight 16 oz ones — and the well-worn "eight glasses a day" is 64 fluid ounces, which is half a gallon rather than a full one. The two habits are often quoted as though they were the same figure, and they differ by a factor of two.

Turning a bottle price into a price per gallon

Unit pricing in the United States is inconsistent across categories — fuel and milk are priced by the gallon, bottled drinks by the container — so a comparison usually means converting one to the other. Multiply the bottle price by 128 and divide by the bottle size in fluid ounces. A 20 fl oz bottle at $1.79 works out at $11.46 a gallon, against roughly $3.50 for the same volume of fuel and about $4 for milk.

The same arithmetic exposes concentrate and refill economics. A 64 fl oz refill jug at $9 is $18 a gallon; a 16 fl oz bottle of the same product at $4 is $32 a gallon, nearly twice as much for the same liquid. Working in gallons rather than in whatever unit the shelf label chose is the fastest way to see which package is actually cheaper.

Where the missing factor of two comes from

Almost every error in this direction is a single doubling, and it has three usual sources. The first is the pint: a US pint is 16 fluid ounces, not 8, and reading it as a cup halves the answer. The second is the half gallon, a 64 fl oz jug that people file as "a gallon-ish container". The third is the imperial pint at 20 fluid ounces, which turns up in British sources and is neither of the other two.

The check is to convert back. Take the gallon figure, multiply by 128, and see whether the fluid-ounce total you started with reappears. Since every rung of the ladder is even, a wrong answer in this direction is almost always exactly half or exactly double the right one — an error that is easy to spot and impossible to see if you never do the return trip.

The other gallon takes 160 fluid ounces

An imperial gallon is 4.54609 litres and holds 160 imperial fluid ounces, arranged as 8 imperial pints of 20 each. It comes from an 1824 definition — the volume of ten pounds of distilled water — which is why an imperial fluid ounce of water weighs almost exactly one ounce, and why the US gallon, descended from a 1707 wine gallon, does not have that property.

The two systems are close enough to be mistaken for each other and far enough apart to matter. Converting 160 imperial fluid ounces as though they were US ones gives 1.25 US gallons, which is close to the true 1.2 by accident: the smaller imperial ounce and the larger imperial gallon partly cancel. That near-miss is what makes the mistake survive a sanity check, so the unit has to be established from the source rather than from the arithmetic.

Working a dose back from ounces to gallons

Concentrates state their rate per gallon, and reading the label in reverse is a common use for this conversion. If a bottle holds 32 fluid ounces and the rate is 2 fl oz per gallon, the bottle treats 16 gallons. At 4 fl oz per gallon the same bottle treats 8. The ratio is what the label is really claiming when it advertises coverage, and it is stated in ounces because that is the size of the cap.

The trap is a sprayer or bucket that is not a whole gallon. A 3-gallon garden sprayer at 2 fl oz per gallon needs 6 fluid ounces; a 5-gallon bucket at the same rate needs 10, which is a cup and a quarter. Measuring the dose with the cap and the water with the bucket keeps both in units you can actually see, and it avoids converting the water into ounces at all.

Dividing a fluid-ounce total by 128 in your head

Walk the ladder rather than attacking the 128 directly. Divide by eight for cups, halve for pints, halve again for quarts, then divide by four: 320 fl oz becomes 40 cups, 20 pints, 10 quarts, 2.5 gallons. Four small divisions are easier to do and much easier to check than one awkward one, and each intermediate figure is a quantity you can picture.

For a rough figure, 128 is close enough to 125 that dividing by 1,000 and multiplying by eight works: 400 fl oz ÷ 1,000 × 8 = 3.2 gallons, against a true 3.125. That estimate always runs a little high, by about two and a half per cent, which is the right direction when the question is whether a container will hold something.
