US cup and US gallon

A US customary cup is 236.6 ml, but American nutrition labels use a "legal" cup of exactly 240 ml, and a metric cup in Australia is 250. A recipe scaled up tenfold will show which one it assumed.

A US gallon is defined as 231 cubic inches, exactly — a definition that comes from an English wine gallon of 1707. The imperial gallon is 4.55 litres, about 20% larger.

It takes 16 US cups to make a US gallon

Going this way is a division, and by a whole number: 16 of these fit into one US gallon with nothing left over. The awkwardness is only that the answers come out as fractions — a third of a US gallon, a twelfth of one — rather than as the round figures the other direction gives you.

Nothing is lost to rounding even so. The division is exact, and if your answer will not sit still as a decimal — 0.0833… and friends — that is the fraction showing through, not an error creeping in.

Check which US gallon you mean

The US gallon is two different sizes wearing one name. This page uses the US one, which is 16 cup; the imperial one still used in the UK and Ireland is 19.2152 cup — larger by 20.1 %.

That gap is the awkward size: far too big to ignore in a recipe, and far too small to spot from the answer alone. If your figure came from a British source, take the second number, and note that the fluid ounce is the one unit here where the imperial measure is the smaller of the two.

Sixteen cups to a gallon, and the two rungs in between

The chain is 2 cups to a pint, 2 pints to a quart, 4 quarts to a gallon, which multiplies to 16. Written that way the number is obvious; recalled cold it is not, because the gallon has three plausible small numbers attached to it — 4 quarts, 8 pints, 16 cups — and they are all correct about different units. Picking the wrong one halves or doubles the answer with nothing to signal the error.

The useful landmarks are the quarters. Four cups is a quart, eight is a half gallon, twelve is three quarters, sixteen is a gallon. Any cup count that is a multiple of four converts to a clean fraction of a gallon, and any that is not will produce a sixteenth — 10 cups is 0.625 gallons, which is a number nobody can act on. Restating it as 2½ quarts is what a cook actually needs.

When a cup count outgrows the measuring cup

Somewhere around twelve cups the unit stops being a tool and becomes a bookkeeping problem. Measuring 14 cups of stock is fourteen separate operations, each with its own chance of a miscount, and the only record that any of them happened is your memory. Filling a quart jug three and a half times is four operations against a marked line, and the line does not forget.

This is the practical reason to convert rather than a theoretical one. Batch failures in home kitchens are overwhelmingly counting errors rather than ratio errors — one cup too many of liquid in a doubled recipe is far more common than a wrongly scaled ingredient. Working in the largest unit the vessel supports removes most of the opportunities to miscount.

Sizing the pot, cooler or dispenser from a cup total

Cookware is sold in quarts, drink dispensers and coolers in gallons, and neither is sold in cups — so the conversion is usually the first step in choosing equipment. Sixteen cups is a gallon and wants a 6-quart pot, because a pan filled to its rated capacity cannot be stirred and will boil over. A 5-gallon cooler takes 80 cups; a 3-gallon dispenser takes 48.

Serving counts come from the same arithmetic. A gallon of punch is 16 cups, which is 21 servings at six fluid ounces or 16 at eight. A gallon of iced tea over ice in 16 oz cups is nearer 10 servings, because the ice takes a third of the glass and then melts into the drink. Deciding the serving size before the batch size is the step that stops a party running dry with a full cooler.

The eight-versus-sixteen error and how to catch it

Because 8 and 16 are both real gallon divisors, an answer that is out by a factor of two looks entirely reasonable. A batch calculated at 8 cups to the gallon will be half the size it should be, and nothing about the number 4.5 gallons announces that it ought to have been 2.25. There is no internal contradiction to notice.

The check that works is to name the unit at every step rather than only at the end. Sixteen cups, eight pints, four quarts, one gallon — say all four, and the wrong one falls out immediately because it will be attached to the wrong word. Doing it aloud once, before the shopping rather than during the cooking, is enough; the error is a recall failure rather than an arithmetic one, and recall improves when the number has a noun attached to it. This is the same discipline that makes dimensional analysis work in a laboratory, and it costs about two seconds in a kitchen.

Cups of a solid do not fill a gallon like a liquid

A cup is a volume, so sixteen cups of anything is a gallon of space — but only if the thing pours and settles the way water does. Flour, sugar and rice all pack: a cup scooped straight from the bag is denser than one spooned in and levelled, and the difference for flour runs to twenty per cent, which across sixteen cups is more than three cups of discrepancy.

That is why dry ingredients in quantity are weighed rather than measured. Five pounds of all-purpose flour is around 18 cups at 120 grams to the cup, and a gallon jar will not take the bag even though the arithmetic says it nearly should. For a large batch, convert the recipe to weight once and the packing question disappears entirely.

The imperial gallon takes about nineteen US cups

An imperial gallon is 4.54609 litres, about 20 per cent more than the US gallon's 3.785, and it works out at 19.2 US cups. There is no British cup to count it in — the imperial system divides the gallon into 8 pints of 20 fluid ounces and stops there — so any cup figure attached to an imperial gallon is a conversion somebody has already made.

The place this bites is an older recipe or a brewing instruction. A five-gallon brew in imperial units is 22.7 litres against 18.9 for US gallons, nearly four litres apart, and a recipe scaled with the wrong gallon comes out at the wrong strength rather than merely the wrong volume. Canada is the usual source of ambiguity, having used imperial gallons before metrication and being surrounded by US ones since.

Storing and freezing a gallon-sized batch

A gallon is rarely stored as a gallon. Sixteen cups divides naturally into four quart containers, eight pint ones, or a gallon bag laid flat — and the flat bag freezes and thaws fastest, because the limiting factor is thickness rather than volume. Portioning at the point of storage is also the last easy moment to divide the batch; once it is frozen in one block it is a single serving of a gallon.

Leave room for expansion. Water gains about nine per cent in volume on freezing, so 16 cups going into containers rated at 16 cups will push lids off. Filling quart containers to about 3½ cups each takes five containers rather than four and loses nothing, which is the trade every batch cook eventually makes once. Anything with a high fat or sugar content expands less, since it is the water in the mixture doing the expanding, but the difference is not large enough to plan around and a soup is mostly water whatever else is in it.
