A US gallon is defined as 231 cubic inches, exactly — a definition that comes from an English wine gallon of 1707. The imperial gallon is 4.55 litres, about 20% larger.

A US pint is 473 ml and an imperial pint is 568 ml — a fifth larger. This is the single most consequential difference between the two systems for anybody following a recipe or ordering a drink.

A US gallon is exactly 8 US pints

Check which US gallon you mean

The US gallon is two different sizes wearing one name. This page uses the US one, which is 8 pt; the imperial one still used in the UK and Ireland is 9.6076 pt — larger by 20.1 %.

That gap is the awkward size: far too big to ignore in a recipe, and far too small to spot from the answer alone. If your figure came from a British source, take the second number, and note that the fluid ounce is the one unit here where the imperial measure is the smaller of the two.

Dividing a gallon into eight pints

Three halvings do it: a gallon halves to 2 half-gallons, then to 4 quarts, then to 8 pints. Every step is a real container that something is sold in, which makes this the easiest division on the ladder to do without writing anything down — and the easiest to stop one step early, at four, which is quarts.

The result is deliberately coarse. Eight is a small enough number to count on a worktop and large enough to portion a batch into useful pieces, and it is why the pint is the default size for a freezer container, a bar glass and a carton of cream. Anything that needs more than eight pieces is usually better divided in cups, and anything that needs fewer wants quarts.

A gallon of stock into freezer containers

Pint containers are the standard for freezing liquid because a pint thaws in a reasonable time and is roughly one meal's worth of stock, sauce or soup. A gallon fills eight of them — but filling eight to the line is the mistake. Water expands about nine per cent when it freezes, and a sealed container filled to its rated volume will either lift its lid or split at the seam.

Leave about two fluid ounces of headroom per pint, which turns a gallon into nine containers rather than eight. Freezing flat in bags instead trades the tidy count for speed: a pint laid flat is thin enough to freeze through in a fraction of the time and to thaw without a water bath, and thickness rather than volume is what governs both. The count is worth writing on the lid along with the date, because a pint of stock and a pint of a reduced sauce look identical once frozen and are not interchangeable in any recipe that called for one of them.

Pint servings, and what the ice takes

A gallon is eight pints on paper and rarely eight servings in practice. A 16 oz pint glass poured over ice carries about 10 to 12 fluid ounces of liquid, so a gallon stretches to eleven or twelve drinks — and then contracts again as the ice melts and dilutes what is left. Planning a batch by the pint without deciding about ice first gets the quantity right and the strength wrong.

The same applies to head on beer. A US pint pour with a proper head delivers somewhat less than 16 fluid ounces of liquid, which is why keg yields are always quoted as theoretical. Whether that matters depends on what is being served: for a punch, the dilution is the bigger issue; for a keg, it is the last gallon, which foams more than the first seven.

Forty pints in a five-gallon bucket

The 5-gallon bucket is the unit most mixing and cleaning instructions assume, and it divides evenly all the way down: 20 quarts, 40 pints, 80 cups, 640 fluid ounces. That is what makes per-gallon dosing rates workable in it — 2 fl oz per gallon is 10 fluid ounces per bucket, which is a cup and a quarter, and every intermediate figure stays whole.

What a bucket does not do is stay liftable. Five gallons of water is about 42 pounds, and a bucket of anything denser — paint, joint compound, a slurry — will be well past that. The pint count is the reason people fill them anyway, because forty pints of capacity looks like usable volume right up until the handle is in your hand.

Britain kept the pint and let the gallon go

The imperial gallon has effectively disappeared from British daily life — fuel is sold in litres, milk in litres, and the gallon survives mainly in fuel economy figures and older documents. The pint did not go with it. Draught beer and cider are still sold in pints, and so is milk in returnable bottles, which makes the pint one of the very few imperial units with a continuing legal role in the UK.

That asymmetry matters for anyone converting from a British source. A pint figure in current British use is a live measurement of 568 ml; a gallon figure is usually historical or a fuel-economy statistic, and the ratio of eight between them holds in both systems while none of the sizes do. When both units appear in one source, the pint is the one that has been checked recently.

Fractions of a gallon, counted in pints

The pint is fine enough to make gallon fractions concrete. A quarter gallon is 2 pints, a half is 4, three quarters is 6, an eighth is 1. Every eighth of a gallon is a whole pint, which is more than can be said for cups, where a third of a gallon lands on 5⅓ and stops being a measurement.

That resolution is what makes the pint the right unit for splitting a batch between people or containers. A gallon shared four ways is 2 pints each; shared eight ways it is a pint each; shared three ways it is 2⅔ pints, and at that point the honest answer is to convert to cups and give everybody 5⅓, or to change the number of shares.

When a pint is the wrong portion to divide into

A pint is the wrong size whenever what is being divided will be used all at once or in very small amounts. A gallon of concentrate portioned into eight pints is eight containers to store and eight seals to fail, when the dosing is done in fluid ounces anyway. A gallon of paint decanted into pints dries in the tin faster than it does in the can, because the surface-to-volume ratio goes up with every division.

The general rule is to divide by how the thing gets used, not by what the ladder makes easy. Stock is used a pint at a time, so pints are right. Oil is used a quart at a time. A cleaning concentrate is used an ounce at a time and should stay in its original container until it is needed, where the arithmetic that matters is not this one. The conversion is easy enough that it tempts people into doing it for its own sake, and eight tidy pints of something that wanted to stay a gallon is a worse outcome than an untidy number would have been.
